Mixed sprout salad in hot’n’sweet peanut dressing

 

When you’re all alone at home the need for comfort food is at its highest and there’s a slight chance of a binge. My mum and dad were out and @nomadwanderer was coming over. Instead of binging, I focused my energy into making this salad. It happened quite spontaneously out of the need for sprucing up the boring regular mix sprouts. I found this salad to be extremely satisfying and well, its healthier than most comfort foods. It took me less than 10 minutes to put this together. 

You’ll need:
1 cup mixed sprouts
1/4th Red pepper, finely chopped
1.5 tsp peanut butter (preferably unsweetened)
1.5 tsp Moshe’s chilli jam (if you don’t have this no sweat, use 1/2 tsp honey diluted with 1 tsp water and mix in chilli flakes)
Salt to taste 

How to make it:
Steam the sprouts for about 5 minutes. I tend to cook them al dente since I love the crunch factor. You can cook them more if you like your sprouts well cooked. Remove from heat and drain (use the water drained for a soup. Nothing goes waste baby!) Set aside to cool.In a salad bowl, mix the peanut butter and chilli jam till smooth. Add sprouts to the dressing, 2 tsp at a time, making sure that the smooth spicy peanut butter is coating every bit. Add the salt and chopped peppers right at the end and mix well.Your salad is ready!
Warning: Since the recipe uses peanut butter and sprouts, the salad is strictly a stand alone meal. Do not make this salad when you’re eating salad as a part of a meal.
